Argentinian skewers with Chimichirri Sauce

Chimichurri Sauce (Argentina)

Argentinian food is sparking interest in food circles and we also love these flavours and processes!  We have been incorporating these into our Mexican and South American cooking classes for some time now and want to share the recipe for the famous Chimichurri
 

Sauce 

Ingredients 

¼ cup parsley leaves

¼ cup coriander leaves & stems (or you can use 1Tbsp fresh oregano)

¼ cup oil

1 small garlic clove, minced

2 tbsn red wine vinegar

pinch chilli flakes

1/8 tsp pepper

1/8 tsp salt

1/8 tsp pepper

Process

  1. Whizz all ingredients together in a stick blender.
  2. Adjust balance to taste with more vinegar, salt, sugar to taste.
  3. Prepare mixed vegetables with beef on skewers
  4. Cook over coals if possible or grill on hot oven
  5. Once cooked to your liking, smother with the gorgeous chimichurri sauce 
  6. Serve immediately with lemon wedges

This sauce works excellent with chicken, seared pieces of skirt or flank steak as well

I have also enjoyed it with seafood!
