Ingredients
¼ cup parsley leaves
¼ cup coriander leaves & stems (or you can use 1Tbsp fresh oregano)
¼ cup oil
1 small garlic clove, minced
2 tbsn red wine vinegar
pinch chilli flakes
1/8 tsp pepper
1/8 tsp salt
1/8 tsp pepper
Process
- Whizz all ingredients together in a stick blender.
- Adjust balance to taste with more vinegar, salt, sugar to taste.
- Prepare mixed vegetables with beef on skewers
- Cook over coals if possible or grill on hot oven
- Once cooked to your liking, smother with the gorgeous chimichurri sauce
- Serve immediately with lemon wedges
This sauce works excellent with chicken, seared pieces of skirt or flank steak as well
I have also enjoyed it with seafood!
