Ingredients
1 orange, skin peeled into large pieces with a vegetable peeler, then juiced
1 lemon, skin peeled into large pieces with a vegetable peeler, then juiced
½ cup sugar
2 Star anise
5 cloves
3 cardamom pods
1 cinnamon stick
1 tsp nutmeg powder (freshly grated if possible)
pinch ginger powder
pinch black pepper (freshly ground)
1 vanilla pod, halved lengthwise
1 bottle red wine
¼ cup brandy or rum (optional)
Process
Place the orange and lemon peel, juice and sugar in a large saucepan.
Add all the spice ingredients and simmer at a low boil until the sugar has dissolved, about 5 minutes.
Add the wine and slowly heat the mixture – don’t boil it, you want to retain the alcohol in the wine.
Strain the mixture through a muslin cloth to remove the spice flavouring ingredients, then add the brandy or rum.
Serve in heatproof glasses.
